Iām a little bit obsessed with France, I love the culture, the people and more importantly the cuisine, when saw a opportunity to work with Antonin from Le Comptoir I jumped on it. Antoine is French but has roots in Guernsey and we unknowingly chose one of his grandmothers favourite spots for our impromptu dinner on the beach that looks over Lihou island.
Antonin cooks good honest mainly French cuisine often stripped down and reinvented and presented beautifully. Wherever possible locality and sustainability are high up on his list of priorities. On this occasion he created his own twist on Cote de veau with sauce aux morilles.
